Can never say no to these. In fact, I wouldn’t mind having this dish on repeat. They are finger licking good! And it’s because of this delicious home made BBQ sauce. I never use store bought BBQ sauce, as it may have a lot more sugar than the one you will cook at home. You do need the sugar for these wings to caramelize but not too much of it. This is the best dish I cooked all week. Not only because it’s really tasty, aromatic and delicious but also because of it’s simplicity to prepare. It’s one of those one-pot dishes that take 20 minutes to prep and then the oven does the work. But when you present it at the table everyone thinks you were really sweating it in the kitchen. Crispy, Baked Chicken Fingers with Panko-Halloumi Crust

chicken fingers2.jpgEasier, healthier, quicker, tastier chicken nuggets. Who wouldn’t want that? These are really easy, foolproof and delicious. For the coating I used panko breadcrumbs, as I like the crispier texture. Added grated halloumi to that and some Italian seasoning. Mixed with olive oil et voila! The perfect coating. Did I mention they are oven-baked? They come out crispy, golden, and gorgeous. Serve with a nice salad and lots of lemon wedges. Continue reading

Lemony Roasted Chicken with Dijon Mustard and Black Pepper

chick lemon.jpgIt was one of those days, that chicken was on the menu. Roasted chicken with potatoes is a weekly staple in my house. Kids like it, grown ups like it, dog likes it. This time I had to try something new. My kids are my worst nightmare when it comes to food, so I had to make something not too strange or new to their taste buds. So I squeezed lemons, I chopped onions, I mashed garlic, I poured in the wine, emptied the mustard jar and went overboard with the pepper mill. I also drank some of the wine. Continue reading
