“I hate fried chicken” said no one ever. Unless that someone is a vegetarian or vegan. Fried chicken reminds me of my younger days, when take-away at the office was the norm when working late. I actually almost hoped for overtime, to have the perfect excuse for a zinger with coleslaw.
But now I am older and wiser. So I bake my fried chicken and I haven’t looked back since. One of the secrets of success, is to use lots of spices for flavour. Second, use panko breadcrumbs rubbed in olive oil. If you can’t find panko, use fresh breadcrumbs lightly toasted in a frying pan and then rubbed with olive oil. Third and most important, bake the chicken on a wire rack. This allows for the air to circulate, creating the crunchiest coating.

Oven fried chicken wings with blue cheese sauce
Ingredients
- 1 kg chicken wings
- 2 tsp sea salt
- 2 tsp garlic powder
- 4 tsp paprika
- 1 tsp smoked paprika
- 1 tsp turmeric
- 1 tsp black pepper
- ½ tsp Cayenne pepper
- 6 Tbsp all-purpose flour
- 3-4 large eggs
- 1 heaped tsp Dijon mustard
- 2 cups approx. panko breadcrumbs
- 4 Tbsp olive oil
For the blue cheese dip:
- 100 grams of blue cheese
- 100 grams of sour cream
- 2 Tbsp mayonnaise
Instructions
- Preheat the oven to 200° C fan. Mix the spices with the flour in a bowl. Put the wings in a bowl and mix with the spices and flour. Shake the bowl until the flour is coated.
- Lightly beat the eggs in a bowl and mix in the mustard.
- In another bowl, mix the panko breadcrumbs with the olive oil.
- Dip the wings first in the egg and then in the bread crumbs. Place them on a grill over a baking tray. Bake for 40 minutes until crispy and golden. Serve with the blue cheese dip.
- To make the dip, smash blue cheese with a fork and mix in the mayo and sour cream.
