I couldn’t resist adding coconut milk. I know it’s not the traditional ramen dish but it’s sooooooo tasty! I created the delicious broth with the prawn shells and it came out phenomenal. I used thin egg noodles as I think they are hard to overcook. There’s nothing worse than overcooked noodles in your ramen so if you can’t get hold of ramen noodles, egg noodles are the best choice. Roasted Tomato and Red Pepper Soup with Prawns

One of my favourite sauces to serve with fish is the catalan sauce «romesco». I fell in love with in during a trip to Barcelona and everytime it lands on my plate, I’m desperately searching for a spoon, to devour it to the last drop. So I decided to turn it into a soup. Roasted tomatoes and sweet red peppers, blanched almonds amd the intense flavour of smoked paprica. What’s not to like about that. This soup gets all it’s delicious creaminess from the ground almonds, without the addition of cream. Serve it with prawns and your guests will be asking for the recipe. Continue reading

Roasted Pumpkin soup with Almonds

As a Cypriot I grew up eating “kolokotes”, the Cypriot version of  pumpkin pie, and undoubtedly a really -REALLY-  delicious pastry. But I cannot ever remember my mother or grandmother, ever using pumpkin for anything else, which is strange, considering the love Cypriots have for vegetable dishes. Maybe it’s because of the sweetness of pumpkin, that traditional Cypriot cooks, considered it to be a dessert ingredient. But now we know better. Roasting pumpkin brings out all the flavour and sweetness of this glorious vegetable, making it an amazing addition to salads, a nutritious and flavourful vegetarian main or a velvety, delicious soup. Courgettes Soup with Parmesan Crisps

What’s not to like about courgettes? Fry them, stuff them, mash them, bake them, they always come out right. Courgettes pair beautifully with cheese. The saltiness and sharp taste of cheese gives them a great flavour kick. I used parmesan and gruyere to flavour my soup and it came out great. But the really wow factor here, are the parmesan crisps. They are salty and crunchy and insanely good with this soup. I garnished with toasted pine nuts and pesto-oil and served with extra grated parmesan for my guests to serve themselves. Spiced Lentil Soup with Coriander and Coconut Milk

 

lentil soup.jpgSince I found my favourite recipe for lentil curry, I have been eager to turn it into a soup. All those spices and aromas pureed and served into a bowl with some crusty bread and a generous squeeze of lemon, it’s just perfect on a winter’s day. This soup is great. It’s very easy to prepare and incredibly hearty and filling. Red lentils, cooked with spices like cumin and mustard seeds then finished off with creamy coconut milk, fresh coriander leaves and lemon juice. Continue reading
