Ingredients
  

  • 600 g skinless and boneless chicken thighs or breasts
  • 1 tsp cornflour
  • 1 tsp Chinese Five spice powder or ½ teaspoon white pepper
  • 1 Tbsp soy sauce
  • 3 Tbsp olive oil
  • 80 grams raw cashews
  • 30 grams of ginger in strips
  • 3 garlic cloves chopped
  • ½-1 tsp chili flakes
  • 300 g pack wok mix vegetables
  • 2 Tbsp honey
  • 1 Tbsp sesame seeds
  • 1 spring onion sliced diagonally

Sauce

  • 2 Tbsp oyster sauce
  • 2 Tbsp sweet chilli sauce
  • 2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 2 Tbsp dry sherry
  • 60 ml orange juice
  • 1 tsp cornflour

Instructions
 

  • Cut the chicken into strips and put it in a bowl. Add the cornflour, spice mix and soy sauce. Mix and marinate while preparing the rest of the ingredients.
    In a small bowl, mix all the ingredients for the sauce.
    In a large pan or wok, put the oil over medium heat and add the cashews. Sauté them, stirring constantly, until they turn golden. Take them out in a bowl.
  • In the same pan or wok, put the ginger, garlic and chili flakes. Stir-fry for 1 minute and add the chicken with its marinade and increase the heat. Continue sautéing, stirring, until the chicken takes on color and is just cooked.
    Add the vegetables and mix. Pour over the sauce and let it simmer a few minutes until it starts to thicken slightly. Add the cashews and honey. Simmer about a minute and serve
    with rice sprinkling with sesame seeds.
