Unlike other recipes, which use dates as a sweetener, this recipe calls for dried apricots, which are less sweet with a delicious tang. SO good!

Ultimate nut bars
Perfect oat, nut and seed bars are my perfect breakfast, lunch, dessert, dinner…all-day snack. Unlike other recipes, which use dates as a sweetener, this recipe calls for dried apricots, which are less sweet with a delicious tang.
Ingredients
- 160 grams whole oats
- 115 grams raw almonds
- 45 grams desiccated coconut
- 150 grams dried apricots
- 50 grams soft brown sugar
- 60 grams maple syrup
- 60 ml olive oil
- 35 grams νερό
- 1 tsp salt
- 50 grams sunflower seeds
- 50 grams pumpkin seeds
- 30 grams chia seeds
- 70 grams dried cranberries or raisins
Instructions
- Preheat the oven to 175° C fan. In a shallow pan, spread the oats, almonds and coconut. Bake for 12-15 minutes. Lower the temperature to 160° C fan.
- Put apricots, brown sugar, maple syrup, olive oil, water and salt in a blender. Grind well until the ingredients look like thick jam. Transfer the mixture to a large bowl.
- Add the toasted oats, almonds and coconut to the bowl. Then add the sunflower seeds, pumpkin seeds and chia seeds. Mix well. Add the cranberries and mix.
- Transfer the mixture into a paper lined square pan (22 Χ 22 cm). Wet palms of your hands and press the mixture well and evenly in the pan.
- Bake at 160° C for 25 minutes, until golden. Let the mixture cool completely in the pan. For easier cutting, chill in the fridge.
- With a sharp knife, cut rectangular or square bars.
- Store the bars in the fridge, in a covered container.
