Easy, No-bake Strawberry Cheesecake

IMG_0056It’s one of those easy desserts, the perfect ending to a summer dinner on the veranda. I never had “a thing” for cheesecakes but this one tastes more like a light and luscious strawberry mousse. The crust is chocolatey and in perfect harmony with the tanginess of the cheese and the berries. I used white chocolate for sweetness which is heavenly. This is so easy and delicious. No-bake White Chocolate Cheesecake

I sometimes forget how easy and spectacular this dessert is. Whip it up in minutes and serve it proudly to your guests or place it on your lap and enjoy it with a big spoon while watching “masterchef”. I’m not a cheesecake fan, but this is an exception. The white chocolate does the trick for me, but I truly love the colourful combination of berries and pistachios. This is a no-bake cheesecake which will save you so much time. Mushroom and Pumpkin Cheesecake

I have been searching high and low for a simpler version of the amazing and delicious quiche. Although I love baking day on a winters’ day, extra time for a pie crust, (kneading, resting, rolling, blind baking etc. etc.…) is too hard to find with three boys, a hubby and a lively dog! Apple Cheesecake

I’m one of those people who are not crazy about cheesecake. I wouldn’t say no to a piece, of course, but if I had to choose a dessert from a menu, cheesecake would not be my first choice. That said, I understand that cheesecake is a divine dessert. It’s creamy and velvety with a slight tang and saltiness from the cheese. Combined with any fruit is heaven on a plate. Now imagine eating an apple pie topped with cheesecake. You get the sweetness of the apples, the aroma of cinnamon, the crunchiness of the almonds and the creaminess of the cheesecake. Baked “Anari” Cheesecake with Pomegranate seeds

pomegranate cheesecake.jpgI saw quite a few posts on Instagram of people picking apples this time of year. Well, in Cyprus, Autumn is the season for the sweetest, reddest pomegranates. I love them everywhere. Sprinkled over Salads, over a luscious pannacota or, in this case, over a creamy cheesecake. I used a combination of Philadelphia and “Anari” cheese which is the Cyprus version of Ricotta cheese, only lighter. Surely, this is not a guilt free cheesecake but it’s considerably lighter than the all Philadelphia version. The creaminess of course, is all there. Continue reading

Blueberry, Ricotta (Anari) and Almond bake

I didn’t grow up on blueberries. In fact, I first tasted fresh blueberries in London, about ten years ago. Even though I am lucky enough to live on an island that produces all kinds of fresh fruits and vegetables in abundance, Cyprus is just too warm for blueberries. I absolutely love this tiny berry that stains your mouth blue. Luckily I can now buy them fresh from my local supermarket, but frozen ones are a really good alternative. Continue reading
