It’s an addiction, I admit it. For me, this is what a great pasta dish is all about. Just a few ingredients can compose the most delicious dish. Chilli flakes of course are a MUST and take this dish to another level.
Spaghetti with clams
I LOVE LOVE LOVE it! Easy to make and soooo delicious and fresh. My perfect summer pasta dish. I use frozen clams cause I can't get my hands on fresh as easily. Remember to always discard the unopened clams.
Ingredients
- 30 grams olive oil
- 60 grams unsalted butter
- 4 cloves garlic chopped
- 1-2 hot peppers sliced or ½ Tbsp chili flakes
- 1 kg frozen clams
- 180 grams dry white wine
- ½ cup parsley chopped
- 500 grams spaghetti or linguini
- Salt and pepper
Instructions
- Cook the spaghetti in plenty of salted water 2 minutes less than the time indicated on the packet. Don't overcook. Drain but keep 1 cup of pasta water.
- In a large pan or pot, put the olive oil and 20 grams of the butter over medium-high heat. Sauté the garlic and hot pepper over medium heat until the garlic turns golden.
- Put the clams and wine in the pan. Add the rest of the butter and boil until the shells open (discard the closed ones). Boil until there is some liquid (about 1 cup) left in the pan.
- Add the spaghetti and parsley. Stir very well and bring to a simmer. Add a little of the pasta water if necessary. Cook until sauce is almost absorbed and pasta is cooked al dente. Season with plenty of pepper. Serve immediately.
