The coolest, easiest dessert. It kind of reminds me of the simplicity of baby food, the kind you throw fresh fruit in a food processor, blend for a few seconds and there you have it; baby fruit puree.

Yogurt, honey and fruit, particularly peaches, remind me of summers in Greece. The best breakfast for me is a bowl of fresh fruit, topped with a dollop of thick Greek yogurt and drizzled with honey. This combination is perfect to turn into a frozen dessert. Peaches are delicious and so flavourful this time of year, plus they work so well with yogurt and honey. No need to peel them, just throw them in the food processor with the rest of the ingredients.

Forget store-bought frozen yogurt. This is a keeper. Good enough for breakfast too.

Peach and Pistachio Frozen Yogurt

Ingredients
  

  • 1/3 cup pistachios
  • 3 large unpeeled peaches washed, cored and cut into thick pieces
  • 4 Tbsp honey
  • 4 Tbsp granulated sugar
  • 2 cups full fat Greek yogurt
  • ½ cup cream
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions
 

  • Put pistachios in the bowl of a food processor and pulse a few times until chopped. Take them out into a small bowl. Set aside until needed.
  • Put the peach pieces into the food processor bowl (no need to wash the bowl), together with the honey and sugar. Blend until you have a smooth puree. Add the remaining ingredients and blend until everything is combined. Pour mixture into a bowl. Mix in the pistachios.
  • Churn mixture in an ice cream maker. If you don’t have one, freeze the mixture until almost set. Take it out of the freezer and mix well with a spatula. Repeat 2-3 times then leave to set completely in the freezer.
