Ingredients
  

  • 180 grams lentils
  • 500 grams sweet potatoes peeled
  • 100 grams halloumi coarsely grated
  • 60 grams breadcrumbs
  • 45 grams approximately 1 cup fresh coriander and parsley
  • 2 spring onions finely chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp crushed coriander seeds
  • ½ tsp cumin
  • ¼ tsp turmeric
  • ¼ tsp chilli powder
  • 1 egg

Instructions
 

  • Boil the lentils in plenty of water for 15 minutes. Drain and place them in a bowl.
  • Cut the sweet potatoes into small cubes, drizzle with a little olive oil, season with salt and pepper, and bake in a preheated oven at 180°C (356°F) for 25–30 minutes. Mash them with a fork and add them to the bowl with the lentils.
  • Add all the remaining ingredients and mix well until thoroughly combined. Shape the mixture into 12 patties. Place them on a greased baking tray and brush them with a little olive oil.
  • Bake in a preheated fan oven at 230°C (446°F) for 15 minutes, turning the patties once halfway through cooking.
