Lentil and Sweet Potato Patties

Lentil and sweet potato patties are a delicious and nutritious choice, ideal for a light yet satisfying meal. Lentils are combined with the natural sweetness of sweet potatoes, salty halloumi and fresh herbs, creating patties with rich flavour and a wonderful texture.

- 180 grams lentils
- 500 grams sweet potatoes peeled
- 100 grams halloumi coarsely grated
- 60 grams breadcrumbs
- 45 grams approximately 1 cup fresh coriander and parsley
- 2 spring onions finely chopped
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp crushed coriander seeds
- ½ tsp cumin
- ¼ tsp turmeric
- ¼ tsp chilli powder
- 1 egg
Boil the lentils in plenty of water for 15 minutes. Drain and place them in a bowl.
Cut the sweet potatoes into small cubes, drizzle with a little olive oil, season with salt and pepper, and bake in a preheated oven at 180°C (356°F) for 25–30 minutes. Mash them with a fork and add them to the bowl with the lentils.
Add all the remaining ingredients and mix well until thoroughly combined. Shape the mixture into 12 patties. Place them on a greased baking tray and brush them with a little olive oil.
Bake in a preheated fan oven at 230°C (446°F) for 15 minutes, turning the patties once halfway through cooking.
