
Move over canned salmon, fresh or frozen fillets is the way to go. So so easy to make and the best way to use forgotten salmon from the freezer. I based this recipe on fish cakes but instead of potato in the mix, I used sweet potato. It worked like a charm. Just the right sweetness and creaminess.
I boiled the sweet potatoes first, until very soft. Baking them works also, it just takes a bit longer. There are also harder bits of potato on the edges, which is also fine. Choose your method according to how much time you have.
I used skinless , boneless salmon, sliced it first and them chopped it finely to make salmon-mince. Don’t chop in a food processor. You need small bits of salmon in the mix.
I like mine herby and aromatic so I chopped parsley and dill. If you don’t like dill, you can use coriander or mint. I prefer herbs that are fresh, but I also use dried mint when this is all I have at home.

I usually use fresh breadcrumbs in the mix (you need the something to soak up all the juices otherwise the patties will be difficult to shape). However, whenever I want a gluten free version, I use oats. It does make a slight difference, not in the taste but in the texture. They come out slightly creamy. Personally I prefer the bread. The patties will not be stiff when you shape them but will firm up in the oven. They tangy dip and some lemon wedges are all you need for a delicious feast. Go on. Cook-it-up 🙂

Fresh Salmon Burgers
Ingredients
For the burgers:
- 300 grams sweet potato in cubes
- 500 grams salmon fillets no skin or bones
- 2 spring onions sliced
- 1/3 cup parsley chopped
- 2 Tbsp dill chopped
- 2 Tbsp capers drained
- 1 lemon zested
- 1 Tbsp dijon mustard
- 2 Tbsp mayonnaise
- 1 egg
- 1 cup fresh breadcrumbs or oats for a gluten free option
- ½ tsp black pepper
- ½ tsp paprika
- 1 tsp salt
For the sause:
- ¼ cup mayonnaise
- ¼ cup yogurt
- 1 Tbsp dill chopped
- 1 Tbsp capers
- 2 Tbsp lemon juice
- 1 tsp lemon zest
Instructions
- Preheat oven grill at 240° C.
- Boil or roast sweet potatoes until very soft. Mash with a fork and leave to cool.
- Chop the salmon fillets into small pieces. Put salmon in a large bowl with the remaining ingredients and the cooled, mashed sweet potatoes. Mix well. Shape into 8 burgers.
- Place burgers on paper lined baking trays. Bake in the centre of the oven for 12-14 minutes turning once.
- Mix the sauce ingredients in a bowl. Serve burgers warm with sauce.
