Baked sardines with cherry tomatoes, olives and capers
It doesn’t get more Mediterranean than this! Sardines are one of the most valuable treasures of the see. It is becoming a staple at our house for a very good reason. Extremely healthy and nutritious, they are not at all expensive to buy and feed a crowd.
Ingredients
- 700 grams cherry tomatoes, halved
- 1 large onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 Tbsp balsamic vinegar
- 100 ml olive oil
- ¼ tsp chilli flakes
- 30 grams black olives, pitted
- 30 grams capers
- 2 Tbsp parsley, finely chopped + extra for serving
- 20 sardines without head and backbone
- 2 Tbsp ouzo
- 1 tsp oregano, dried
- Olive oil and parsley for serving
Instructions
- Preheat the oven to 220° C, fan.
- Place the cherry tomatoes, onion and garlic in an ovenproof dish. Drizzle with the vinegar and 60 ml of the olive oil. Add salt and plenty of black pepper. Transfer to the oven and bake for 20 minutes.
- Remove from the oven and add the chilli flakes, olives, capers and parsley. Place the sardines on top. Drizzle with the ouzo and the remaining olive oil. Bake for 15 minutes.
- Sprinkle with oregano and additional parsley. Serve with marinated feta cheese, lemon and crusty bread.
