It was truly an honour and a pleasure for me to join the amazing cooks at Elenion elementary and nursery school, to cook lunch for 120 children. We cooked together with the First Lady Ms Philippa Karsera Christodoulides and the Minister of Education Dr Athena Michaelides.

In the meantime, 21 more schools across Cyprus, served these patties as part of a healthy lunch for their children. Sophia for Children makes sure that these all-day schools serve a healthy lunch daily to all children.

Ingredients
  

  • 200 grams minced beef*
  • 800 grams minced chicken
  • 150 grams sweet potato grated
  • 200 grams green zucchini grated
  • 40 grams parsley finely chopped
  • 250 grams onion grated
  • 35 grams 1 Tbsp tomato paste
  • 40 g oats
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • 1 egg

For the pan

  • 125 ml 1/2 cup olive oil

*you can substitute with minced chicken

Instructions
 

  • Put the minced meat in a large bowl. Squeeze the grated sweet potato and zucchini with your hands to extract as much water as possible. Add them to the bowl with the minced meat along with all the other ingredients except the olive oil. Knead very well.
  • Put 2 tablespoons of the olive oil in a baking pan. Shape burgers (160 – 180 grams each) and place them on the baking tray. Drizzle with the remaining olive oil. Bake at 200° C in the air for 35-40 minutes.

Notes

If desired, add diced potatoes (about 2 cm) around the burgers to cook them together. The potatoes may need a little more time in the oven to get them to brown. So, in this case, take the burgers out of the oven and keep them warm. Put the potatoes back in the oven, increasing the temperature to 220°C, for 10-15 minutes until they are golden brown.
