Yogurt Cream with Red fruits

Ingredients
  

  • 250 ml heavy cream
  • 1 can sweetened condensed milk, 400 grams
  • 500 grams full-fat strained yogurt
  • 1 tsp vanilla extract
  • 90 grams pistachios, shelled and coarsely chopped
  • 350 grams digestive biscuits
  • 1 packet strawberry jelly
  • 500 ml water
  • 300 grams frozen red fruits

Instructions
 

  • Whip the cream until soft peeks form.
  • In a bowl, mix the sweetened milk, yogurt, vanilla, and pistachio nuts. Fold in the whipped cream with a spatula. Break the cookies with your hands and add them to the bowl. Mix gently.
  • Dissolve the jelly in 1 cup (250 ml) of boiling water. Add another cup of cold water and stir. Take 150 ml of the dissolved jelly and add it to the bowl with the yogurt. Mix well and pour the mixture into a bowl, approx. 26 cm (see note). Transfer the dessert to the refrigerator for 1 hour.
  • To finish the dessert, cover the surface with the red fruits. Using a spoon, carefully add the rest of the jelly. Return the dessert to the refrigerator until it has completely set. Serve chilled.

Notes

  1. If desired, the dessert can be frozen in a 26 cm ring mold, which can be placed directly on the serving platter. Crumble 2 additional digestive biscuits and sprinkle them on the base. Then transfer the yogurt cream into the ring mold and chill the dessert for at least 2 hours. When it is chilled and firm, spread the red fruits and jelly on the surface. Freeze again. To serve, run a hot knife around the edge of the ring mold and release the dessert.
  2. Yogurt dessert in a ring mold cannot withstand high temperatures and there is a risk that it will start to melt when taken out of the refrigerator. That’s why I prefer to serve it in a bowl (even though, photographically, the ring mold worked out well for me!).
