Wings with “buffalo” sauce

Ingredients
  

  • 1 kg chicken wings
  • 1 tsp salt
  • 1 tsp garlic powder
  • 2 tsp smoked paprika
  • ½ tsp pepper
  • ¼ tsp cayenne pepper
  • 1 Tbsp baking powder

For the sauce

  • 60 g unsalted butter
  • 2 cloves of garlic
  • ½ cup sweet chilli sauce
  • 1-2 Tbsp hot chilli sauce
  • 2 Tbsp vinegar
  • 2 tsp Worcestershire sauce
  • 1 Tbsp paprika

Instructions
 

  • Preheat the oven to 210°C in the air. Put the wings in a bowl after cutting off the small wing if they have one. Sprinkle with salt, garlic powder, paprika, pepper, cayenne pepper and baking powder. Mix well to get the spices everywhere. Place the wings on an oven rack which you will place over a baking sheet. Add about an inch of water to the pan.
  • Transfer the wings to the oven and bake for 20 minutes. Turn them over and bake for another 20 minutes until they are browned and dry.
  • Prepare the sauce while the wings are cooking: Melt the butter in a large pan or pot. Add the garlic and sauté over medium heat for half a minute. Add the sweet chili sauce, hot chili sauce, vinegar, woster sauce and paprika. Stir to mix and bring to a boil.
  • Add the wings to the sauce. Stir to get it all over. Transfer the wings to a platter and serve with several napkins.
