New way of roasting: Pomegranate juice. It gives such delicate sweetness, but it’s tangy at the same time. It turned my aubergines into something out of this world delicious. I meant to serve this dish as a salad but it’s a gorgeous, vegan, main course really, as the aubergines are so filling, meaty and rich. A colourful, crunchy, fresh, nutty, flavourful salad with a tahini dressing to die for! Brussel sprouts need to be sliced thinly, so it’s best to use a mandolin or a box grater, unless you have advanced knife skills. This is a variation of my tahini cinnamon rolls. I took an instagram challenge to create something exciting and delicious using chocolate. I don’t know if I this is the grand prize winning entry but it sure is a winner in my house. Tahini and chocolate go so well together. The orange accent in the syrup and a touch of salt in the filling make these rolls almost addictive. You can make the dough in the bowl of a food processor for speed. Continue reading
These delicious cookies are something between the Greek «halva», Cypriot tahini pies and butter biscuits. They are crunchy, intensely flavoured with tahini and a lovely almond crunch. I particularly like the hint of cinnamon and sea salt in every bite. They are perfect with a cup of coffee or tea. Best part, they can be mixed entirely in a food processor in no time.
