Just the word “tahini” is enough to make me want to eat this now. These boneless, skinless chicken thighs from Foodsaver Stores are a staple in my freezer. Marinated in tahini, lemon juice and garlic, they become the perfect, healthy meal. The chicken soaks up all the flavours from the marinade and becomes really flavourful, soft and moist. Easy, No-bake Strawberry Cheesecake

IMG_0056It’s one of those easy desserts, the perfect ending to a summer dinner on the veranda. I never had “a thing” for cheesecakes but this one tastes more like a light and luscious strawberry mousse. The crust is chocolatey and in perfect harmony with the tanginess of the cheese and the berries. I used white chocolate for sweetness which is heavenly. This is so easy and delicious. Fresh Salmon Loaf

The salmon patty turned into a loaf. Yes, this is indeed my fresh salmon patty recipe. Same great taste, in less time. I didn’t use canned salmon like most salmon loaf recipes out there. I chopped up two lovely, fresh salmon fillets and mixed them with mashed sweet potato and aromatic herbs like dill and parsley. I served it with lemon wedges but I am assuming a lovely lemony, yogurt based sauce would do it justice too. Continue reading

Slow Roasted, Cajun Spiced Chicken with Rum

I think I have cooked with almost all alcoholic drinks in my store cupboard. My husband always reminds me of the story I almost finished his good (and insanely expensive) brandy on a piece of pork tenderloin.
