Prawn pasta with bisque
Take advantage of all that flavour hidden in the prawn heads and create an amazing pasta dish for your loved ones. I got the best Tiger Prawns. I did not use all the bisque but kept it in the freezer for future use. It also makes an excellent risotto or risotto. Yum!
Ingredients
For the bisque
- 800 grams Black Tiger Prawns, with shell and head, size 16/20
- 1 onion, halved
- 2 cloves of garlic
- 1 carrot, roughly chopped
- 1 sprig of celery, roughly chopped
- 25 grams ginger
- 30 grams olive oil
- 30 grams tomato paste
- 100 grams white wine
- 35 grams unsalted butter
- 10 grams parsley
- 450 grams water
For the pasta
- 30 grams olive oil
- 100 grams shallots
- 1 Tbsp garlic
- 1 Tbsp chillies
- 60 grams white wine
- 70 grams tomato paste
- 75 grams cream
- 1 tps of sugar
- Sea salt and black pepper
- 500 grams linguine pasta
- 1-2 Tbsp finely chopped parsley for sprinkling
Instructions
- Prepare the bisque first. Peel the prawns and keep the heads. Place the prawn heads and all the other ingredients for the bisque in a saucepan. Simmer for 20 minutes.
- Using an immersion blender, grind all the ingredients in the pot. Pass the bisque through a sieve, pressing all the solids well with a spoon to release their juices. Keep the bisque aside.
- Boil the pasta in plenty of salted water, 2 minutes less than the time indicated on the package. Drain but keep some of the water to loosen the sauce if needed.
- Add the olive oil to a large frying pan and sauté the onion, garlic and chilli. Add the prawns and sauté for 1 minute until golden on both sides. Add the tomato paste and pour over the wine. Allow the alcohol to evaporate and add ½ cup of bisque (you can store the rest of the bisque in the freezer in ice-cube trays). Bring to a boil and add the cream and pasta. Stir on the stove for 2-3 minutes until the pasta is cooked and the sauce thickens.
- Sprinkle with parsley and serve immediately.
