Ingredients
For the cake
- 250 grams butter unsalted
- 500 ml milk whole milk
- 400 grams sugar granulated
- 1 sachet of vanilla sugar
- 100 grams cocoa powder
- 900 grams of biscuits
For the chocolate coating
- 250 grams chocolate couverture
- 250 grams cream
- 50 grams butter unsalted
Instructions
Prepare the cake
- Crush the biscuits in a large bowl. Mix the butter, milk, sugar, vanilla and cocoa over a low heat.
- Stir until the mixture is lump-free and uniform.
- Pour the mixture over the cookies. Mix well.
- Pour the mixture into a 23 or 20 cm cake pan after covering it with non-stick paper or plastic wrap.
Preparing the coating
- Finely chop the couverture chocolate and place it in a heatproof bowl.Pour the cream into a saucepan and heat gently until it is hot and just beginning to simmer. Do not let it boil vigorously.Pour the hot cream over the chopped chocolate. Leave it undisturbed for 2–3 minutes to allow the chocolate to soften.Using a spatula or whisk, gently stir from the centre outward until the chocolate is completely melted and the mixture becomes smooth, shiny, and homogeneous.Cut the butter into small pieces and add it to the warm ganache. Stir gently until the butter is completely incorporated and the ganache is smooth and glossy.Allow the ganache to cool at room temperature until it reaches the desired consistency. For a coating, use it while it is still fluid but slightly thickened.Pour or spread the ganache over the cake or dessert, using a spatula to create an even chocolate coating.
