This is a once a week recipe at our house. I make patties all the time. It’s one of the easiest meals I can make for my kids. Stuffing these with cheese makes them so irresistibly delicious!
Stuffing them is not that hard. Just make a large cavity and fill it with grated mozzarella or any other cheese you fancy. Go for melting cheeses with that delicious cheese-pull. Gouda or Gruyere or a combination of the two are great choices.
Make sure that you seal the cheese in the patties although it does ooze out if you add a lot of it. And I admit I do over stuff them every time. It’s cheese after-all! There is no such thing as too much cheese, right? I never worry about the oozing anyway, the cheese meets the potatoes and you are in for a feast!
Cheese stuffed patties with potatoes
A weekly staple and a delicious feast! Very easy to prepare with excellent results. You can freeze these for another day. I used a combination of mozzarella and gouda. You can replace with any melting cheese you like.
Ingredients
For 8 burgers:
- 300 grams ground beef
- 300 grams minced pork
- 1 medium onion coarsely grated
- 1 green zucchini coarsely grated
- ½ cup fresh bread crumbs
- ½ cup parsley chopped
- 1 heaped tsp Dijon mustard
- 1 heaped tsp tomato paste
- 1 tsp dried oregano
- ½ tsp black pepper
- ½ tsp ground cumin
- 1 tsp paprika
- ½ tsp salt
- 1 egg
- 200 grams mozzarella cheese
For the potatoes:
- 4 large potatoes diced
- 2 tomatoes sliced
- 60 ml olive oil
- Salt and pepper
Instructions
- Preheat the oven to 200°C fan. Put half the olive oil in a large oven pan. Add the potatoes and tomatoes. Drizzle with the remaining olive oil and sprinkle with salt and pepper. Transfer in the oven and bake for 30 minutes.
- In a large bowl, mix all the ingredients for the patties. Divide the mixture into 8 patties. Create an indent in each pattie with your fingers and fill with 1 tablespoon of cheese. Seal the burger well by pinching the edges so that the cheese is not visible at all.
- After 30 minutes, remove the pan from the oven and place the patties between the potatoes. Bake for another 30-35 minutes. Serve hot.
