Cheese stuffed patties with potatoes

A weekly staple and a delicious feast! Very easy to prepare with excellent results. You can freeze these for another day. I used a combination of mozzarella and gouda. You can replace with any melting cheese you like.

For 8 burgers:
- 300 grams ground beef
- 300 grams minced pork
- 1 medium onion coarsely grated
- 1 green zucchini coarsely grated
- ½ cup fresh bread crumbs
- ½ cup parsley chopped
- 1 heaped tsp Dijon mustard
- 1 heaped tsp tomato paste
- 1 tsp dried oregano
- ½ tsp black pepper
- ½ tsp ground cumin
- 1 tsp paprika
- ½ tsp salt
- 1 egg
- 200 grams mozzarella cheese
For the potatoes:
- 4 large potatoes diced
- 2 tomatoes sliced
- 60 ml olive oil
- Salt and pepper
Preheat the oven to 200°C fan. Put half the olive oil in a large oven pan. Add the potatoes and tomatoes. Drizzle with the remaining olive oil and sprinkle with salt and pepper. Transfer in the oven and bake for 30 minutes.
In a large bowl, mix all the ingredients for the patties. Divide the mixture into 8 patties. Create an indent in each pattie with your fingers and fill with 1 tablespoon of cheese. Seal the burger well by pinching the edges so that the cheese is not visible at all.
After 30 minutes, remove the pan from the oven and place the patties between the potatoes. Bake for another 30-35 minutes. Serve hot.
