The olive oil and apple cider vinegar add a wonderful acidity, while the creamy dressing made with Greek yogurt, mayonnaise, lemon and Dijon mustard takes the flavour to the next level. It is a dish that pairs beautifully with almost everything and makes the perfect side dish for grilled meats, fish or a summer table shared with friends. It is easy to prepare, can be served warm or chilled, and tastes even better after it has had a little time to rest!

Potato Salad
This potato salad is one of those recipes we always want to have on our table! Simple to prepare, refreshing and full of flavour, it combines our favourite potatoes with fresh herbs, spring onions and capers. The olive oil and apple cider vinegar add a wonderful acidity, while the creamy dressing made with Greek yogurt, mayonnaise, lemon and Dijon mustard takes the flavour to the next level.
Ingredients
- 1.5 kg potatoes
- ½ cup olive oil
- 4 Tbsp apple cider vinegar
- ½ cup fresh coriander cilantro, finely chopped
- ½ cup parsley finely chopped
- 2 spring onions finely chopped
- 2 Tbsp dill finely chopped
- 1 Tbsp capers drained
- 1 lemon zest only
- 3 Tbsp Greek strained yogurt
- 2 Tbsp mayonnaise
- 1 Tbsp Dijon mustard
- 1 Tbsp lemon juice
- Salt and pepper
Instructions
- Wash the potatoes thoroughly and boil them with their skins on in plenty of water until cooked and tender. Drain them and allow them to cool just enough to handle and peel.
- Peel the potatoes and cut them into cubes. Place them in a large bowl. While they are still warm, drizzle them with the olive oil and vinegar. Mix well and leave them to cool completely.
- Add the coriander, parsley, spring onions, dill, capers and lemon zest to the bowl.
- In a small bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt and pepper. Pour the dressing over the potato salad and mix well. Taste and add more salt or pepper if needed.
- Serve as a side dish or as a snack.
