Sweet & Spicy Chicken with Mirin

Ingredients
  

  • 1 kg boneless skinless chicken thighs (about 8 thighs)
  • 80 ml 1/3 cup mirin (Japanese sweet rice wine)
  • 80 ml 1/3 cup soy sauce
  • 80 ml 1/3 cup rice vinegar
  • 3 tbsp Sweet Chilli Sauce
  • 2 tbsp honey
  • 2 cloves garlic crushed
  • 1 tbsp fresh ginger finely chopped
  • 2 tbsp lemon juice
  • 1/8 tsp chilli powder
  • 2 –3 tbsp sesame oil or olive oil
  • A little sesame seeds for sprinkling

Instructions
 

  • Combine all the ingredients, except the chicken, sesame oil, and sesame seeds, in a large bowl to make the marinade.
  • Add the chicken thighs and leave them to marinate for 1–2 hours.
  • Remove the chicken thighs from the marinade and thread them onto skewers.
  • Transfer the marinade to a small saucepan. Bring it to a boil and simmer for about 8 minutes, until it starts to thicken and becomes like a light syrup.
  • Preheat the grill to high heat. Brush the chicken with the sesame oil.
  • Grill the chicken, turning it 2–3 times and brushing it with the marinade, until cooked through and nicely caramelised. This should take approximately 15 minutes.
  • Sprinkle the chicken with sesame seeds and serve immediately.
