Sweet & Spicy Chicken with Mirin

Simply delicious! Sweet enough, spicy enough to adda little kick, and wonderfully aromatic. Mirin is a sweet Japanese rice wine.It is excellent in marinades, especially when combined with soy sauce and a little vinegar. This marinade is also fantastic with beef fillet.

- 1 kg boneless skinless chicken thighs (about 8 thighs)
- 80 ml 1/3 cup mirin (Japanese sweet rice wine)
- 80 ml 1/3 cup soy sauce
- 80 ml 1/3 cup rice vinegar
- 3 tbsp Sweet Chilli Sauce
- 2 tbsp honey
- 2 cloves garlic crushed
- 1 tbsp fresh ginger finely chopped
- 2 tbsp lemon juice
- 1/8 tsp chilli powder
- 2 –3 tbsp sesame oil or olive oil
- A little sesame seeds for sprinkling
Combine all the ingredients, except the chicken, sesame oil, and sesame seeds, in a large bowl to make the marinade.
Add the chicken thighs and leave them to marinate for 1–2 hours.
Remove the chicken thighs from the marinade and thread them onto skewers.
Transfer the marinade to a small saucepan. Bring it to a boil and simmer for about 8 minutes, until it starts to thicken and becomes like a light syrup.
Preheat the grill to high heat. Brush the chicken with the sesame oil.
Grill the chicken, turning it 2–3 times and brushing it with the marinade, until cooked through and nicely caramelised. This should take approximately 15 minutes.
Sprinkle the chicken with sesame seeds and serve immediately.
