Lentils with spinach and orzo

Ingredients
- 1 cup lentils
- 80 ml olive oil
- 1 large onion
- 1 celery stalk chopped
- 1 grated carrot
- 2 cloves garlic
- 2 spring onions
- 250 grams orzo
- 400 grams chopped tomatoes
- 1 Tbsp vegetable powder
- ½ tsp black pepper
- ¼ tsp smoked hot paprika or chili
- 1250 ml water
- 125 grams spinach leaves
- Salt to taste
Instructions
- Put the lentils in a saucepan with 750 ml salted water. Cover the pot and once the water boils, reduce the heat to medium-low. Simmer for 15-20 minutes until the lentils are cooked al-dente.
- In a large frying pan, add half the olive oil and sauté the onions over medium-high heat. Once they start to take on a little color, add the celery and carrot. Sauté for a few minutes until the vegetables soften. Add the garlic and spring onions.
- Add orzo in the pan along with the remaining olive oil, spices and a little salt. Stir until orzo gets heated through. Add the lentils along with their water, the vegetable powder, the chopped tomatoes and 500 ml of water. Cover the pan and simmer until orzo is cooked al-dente. If necessary, add a little water.
- Add the spinach to the pan in 2-3 batches. Stir until just wilted. Serve immediately.
