Ingredients
  

For the spice mix

  • 1 Tbsp cumin
  • 1 Tbsp paprika
  • 1 Tbsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper

For the tomato sauce

  • 2 Tbsp olive oil
  • 2 Tbsp all-purpose flour
  • 500 ml chicken broth
  • 700 grams tomato passata
  • Salt and pepper

For the chicken

  • 4 Tbsp olive oil
  • 600 grams chicken meat no skin or bones, pounded to pieces of equal thickness
  • 1 large onion sliced
  • 1 red bell pepper
  • 1 green pepper
  • 100 grams corn kernels frozen
  • 3-4 spring onions sliced
  • 8-10 corn tortillas
  • 60 ml sunflower oil
  • 350 grams Edam cheese grated

Instructions
 

Mix spice mix in a bowl

  • Add 1 rounded tablespoon to the tomato sauce. Use the rest for the chicken.

To make the tomato sauce

  • Heat oil and cook flour for a minute. Add broth and bring to a boil. Add tomato passata, the spice mix, salt and pepper. Bring to a simmer for 5 minutes.
  • Cook spiced chicken in large skillet, remove in a bowl and slice. In same skillet cook onion, garlic, peppers until charred. Add corn and mix.
  • Brush one side of tortillas with oil. Heat 10 seconds in a dry frying pan on both sides.

To assemble

  • 1. Tortilla 2. Tomato sauce 3. Chicken 4.veggies 5.spring onion 6. Cheese.
  • Spoon over more tomato sauce, sprinkle with a lot of cheese, garnish with spring onions.
  • Bake in a preheated oven at 180°C (fan-assisted) for 30 minutes.
