Ingredients

  • 250 grams traditional village-style pasta
  • 80 grams lountza Cypriot cured pork loin, diced
  • 2 Tbsp olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves finely chopped
  • 250 grams cherry tomatoes halved
  • 50 grams pitted black olives
  • 60 ml white wine
  • 70 grams grated halloumi
  • Plenty of fresh mint
  • Extra halloumi grated, for serving

Instructions

  • Cook the pasta in plenty of salted water according to the packet instructions.
  • While the pasta is cooking, heat a large frying pan and sauté the lountza, stirring frequently, until fragrant and lightly golden. Add the onion and garlic and continue sautéing until the onion softens and begins to colour.
  • Add the cherry tomatoes and let everything simmer together until the tomatoes begin to release their juices. Pour in the wine and allow the alcohol to evaporate.
  • Add the olives, approximately 60 ml of the pasta cooking water and the drained pasta. Toss everything together, then stir in the grated halloumi. Let the dish simmer briefly until the sauce comes together. Season with salt and pepper to taste.
  • Serve immediately, topped with plenty of fresh mint and extra grated halloumi.
