I created many versions of pasta and avocado pesto but I think this one is my favourite. It’s an adaptation from my lemony orzo recipe only creamier. I used fusilli pasta as I love the way this delicious pesto coats these groovy pasta shapes. Farfalle work really well too. Continue reading →

The best way to serve grilled squid. Although, traditionally, I m a huge fan of olive oil and lemon dressing, I love the flavour and freshness of this aromatic pesto with fresh parsley, coriander and mint. Serve it on a platter over fresh greens, like kale, rocket or spinach leaves and you’ve got a definite “wow”! Continue reading →

This is one of my favorite Cypriot dishes. Pork and peas in a rich, sweet tomato sauce. My mom used to braise small pieces of pork in a pressure cooker for ease and speed. I make mine in the oven with a whole piece of pork shoulder. The pork is meltingly soft while the peas soak up in all those lovely pan juices. All you need is some crusty bread to dip in. First attempt at making rugelach today. Made half batch with strawberry preserves and almonds, other half with Nutella and hazelnuts. Didn’t think I would ever say this, but the strawberry won me over! I have always wondered whether rugelach was a cookie or soft pastry. Well, it’s something between a cookie and a croissant...
