Every time I set out to make this recipe, I changed my mind. Always thought it might be too time consuming, fussy and complicated. I was so wrong. This is such a great dish in such a little time. You will have food on the table in one hour including cooking time. You can serve this gorgeous dish at a black-tie dinner or a casual lunch. I actually cooked it for my family on a boring Tuesday. Greek Tortellini Salad

Mix all the ingredients of a fresh Greek Salad with a bowl of cheese tortellini and you will have a fantastic, summery dish, suitable for a delicious vegetarian lunch or a crowd pleasing starter. It’s incredibly easy to make. You can prepare it in advance and chill it until serving time. In fact it will get better after an hour in the fridge. The pasta will have time to absorb all the great flavours of the dressing. It’s the perfect summer dish to satisfy any pasta cravings threatening to mess with the ever so stressful bikini season. Moroccan Chicken and Rice pot

This is the best dish I cooked all week. Not only because it’s really tasty, aromatic and delicious but also because of it’s simplicity to prepare. It’s one of those one-pot dishes that take 20 minutes to prep and then the oven does the work. But when you present it at the table everyone thinks you were really sweating it in the kitchen. Green Vegetable Frittata

I could also call this dish “empty-your-fridge frittata”. I had so many greens; I was either going to start stuffing courgettes or throw everything in a pan and make a frittata. The second seemed like the obvious choice since it’s far less time consuming. But it was also the right choice as this dish came out so delicious. It’s so full of healthy greens like courgettes, spinach, spring onions and green beans, with tangy feta and grated halloumi. Serve it with a bright, cherry tomato salad and you have a fantastic brunch, lunch or dinner. Continue reading

Pasta with Salmon and Lemony Yogurt Cream

Creamy pasta without cream? Yes please! This dish is so summery, vibrant, fresh; it’s hard to believe you can enjoy it guilt-free. It’s oh-so-low-fat, healthy and delicious! The yogurt adds so much creaminess without the extra fat of cream and also a very nice tang, which works so well with the salmon. The lemon adds freshness and just the right amount of acidity. You can prepare it in a snap and it’s one of the coolest ways to use up those forgotten salmon fillets in the freezer. Continue reading
