This is one of those “curry days”. It’s cold and windy outside, the kind of weather you crave a plate of spicy, creamy curry. I saw this lovely Indian chef on Food Network once, Nisha Katona, who created a wonderful curry, in what seemed like 5 minutes. She had everything gathered near the stove of course. A Colourful Chicken Biryani

biryiani2This is it. The aromatic, flavorful, spicy, delicious chicken biryani. If you don’t like spending time in the kitchen, this dish is not for you. But if you really enjoy cooking (and eating) then all the time you spend will be justified when you eat the first bite of this fantastic dish. In India, this is a celebration dish, usually cooked with goat. It consists of aromatic, saffron infused basmati rice, layered with fragrant meat curry and sweet onions. The Perfect Chicken Curry

Chicken curry.jpgI’ve said this before: If you want to make a devilishly good curry, make your own curry paste. Nothing beats the aroma of freshly ground spices and believe me, it’s no fuss! Ok, I admit that opening a jar of store-bought curry paste is simpler, but if you want your guests to be wowed, home made paste is the way to go. In order to make this easier, I used already ground spices in the paste but if you want to go the extra mile, first dry roast whole spices and then grind them. Continue reading

Indian Butter Chicken

I just love Indian food. The spices, the aroma, the creaminess of a good curry, always tickle my taste buds for more. Butter chicken is heaven on a plate. Chicken marinated with yogurt, lemon and spices, then cooked in butter and finished with cream. What’s not to like about that. Actually, although the name of the dish implies otherwise, the quantity of butter used is not sinful. Ok, I admit, it’s not for the figure conscious, but a normal portion of this won’t tip your scale either. And it’s so worth trying. Really. Continue reading
