I couldn’t resist adding coconut milk. I know it’s not the traditional ramen dish but it’s sooooooo tasty! I created the delicious broth with the prawn shells and it came out phenomenal. I used thin egg noodles as I think they are hard to overcook. There’s nothing worse than overcooked noodles in your ramen so if you can’t get hold of ramen noodles, egg noodles are the best choice. Light and luscious Blueberry Ice Cream with Yogurt and Coconut milk

This is healthy. And, it’s a dessert! Not overly sweet, with just the addition of maple syrup. No sugar. No cream. Yogurt and coconut milk are the main ingredients and of course, luscious blue berries. You can use any other berry you like but I do love the flavour and colour of blueberries, even frozen ones. Oh! Slow Roasted Chicken in Coconut Milk

Simply amazing. One of the tastiest, oven roasted chicken dishes ever. The bird slowly roasts in a coconut milk bath, flavored with lemon grass, garlic and ginger. The result is a moist and incredibly flavorful dish, with a wickedly good, slightly spicy sauce you will want to eat with a spoon. Make sure you will butterfly your chicken to maximize the amount of meat submerged in the sauce. Slow roasting is the key here as a higher temperature may burn the coating. Make this today. Spiced Lentil Soup with Coriander and Coconut Milk

All those spices and aromas pureed and served into a bowl with some crusty bread and a generous squeeze of lemon, it’s just perfect on a winter’s day. This soup is great. It’s very easy to prepare and incredibly hearty and filling. Red lentils, cooked with spices like cumin and mustard seeds then finished off with creamy coconut milk, fresh coriander leaves and lemon juice. Continue reading
