Shrimp with Peanut Butter

Ingredients
- 12 large shrimp peeled and deveined, with the tails left on
- Salt
For the Marinade/Sauce
- 2 Tbsp olive oil or another vegetable oil
- 1 medium onion
- 1 spring onion
- 1 Tbsp finely chopped ginger
- 2 garlic cloves
- 2 red hot peppers deseeded
- ½ cup peanut butter
- 1 cup canned coconut milk
- ½ cup fresh cilantro
- 1 Tbsp soy sauce
- 1 Tbsp brown sugar
- ½ tsp black pepper
- 2 Tbsp lemon juice
Instructions
- Place all the ingredients for the sauce in a blender. Blend on high speed until smooth and well combined.
- Place the shrimp in a bowl and season with salt. Mix with a few tablespoons of the sauce. Leave to marinate for 10–20 minutes.
- Thread the shrimp onto small metal or wooden skewers. Grill over high heat for 2–3 minutes on each side, generously brushing them with the sauce as they cook. Serve immediately with extra sauce.
