Quick pan pizza (no yeast)

Ingredients
  

For the dough

  • 450 grams all-purpose flour + extra for sprinkling
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ tsp thyme or oregano
  • 390 grams yoghurt
  • 1 Tbsp olive oil + extra for the pan

For the tomato sauce

  • 1 Tbsp olive oil
  • 1 clove of garlic
  • 70 grams tomato paste
  • 60 ml white wine
  • 500 ml tomato passata
  • 1 tsp sugar
  • ¼ tsp Cayenne pepper
  • Salt and pepper
  • A few basil leaves of basil

Toppings

  • 200 grams Edam cheese
  • Mushrooms bacon, peppers, olives, cherry tomatoes, etc

Instructions
 

  • Preheat the oven to 210°C, fan.

Make the tomato sauce

  • Heat the olive oil and saute the garlic over medium heat. Add the wine and let it evaporate. Add the pureed tomato and tomato paste, sugar, cayenne pepper, salt, pepper and basil. Simmer until sauce thickens.

Make the dough

  • Put all the ingredients for the dough in the bowl of a food processor. Blend until the dough forms a ball. Transfer the dough to a floured surface. The dough will be soft and may stick to your hands.

Assemble the pizza

  • Grease liberally with olive oil the base of a 25 X 35 cm pan. Roll out the dough in a rectangular shape so that it covers the base of the pan. Press with your hands to cover the base entirely. Spread the tomato sauce on the dough. Add whatever ingredients you want except the cheese.
  • Bake for 15 minutes. Lower the oven to 180°C, sprinkle with the cheese and bake for another 15 minutes. Serve immediately.
