Ingredients
  

  • 130 grams Peanut Butter smooth
  • 62 grams icing sugar
  • 100 grams soft brown sugar
  • 100 grams granulated sugar
  • 170 grams unsalted butter
  • ¼ tsp salt
  • 1 vanilla
  • 1 large egg
  • 220 grams of farina flour
  • 40 grams cocoa powder
  • ½ tsp baking soda
  • 200 grams Chocolate chips 120 + 80 grams

Instructions
 

  • Mix the peanut butter with the icing sugar. Make 12 balls (about 16 grams each). Place them in the fridge until you are ready to make the cookies.
  • In a mixer, beat the butter with the two types of sugar, salt and vanilla. When they are light and fluffy, add the egg and continue beating until blended.
  • Sift the flour with the cocoa powder and baking soda. Add them to the mixer bowl with the rest of the ingredients, and beat until a dough forms. Add 120 grams of the chocolate chips and beat again to combine.
  • Divide the dough into 12 parts. Make balls and create a groove in the middle with your finger.
  • Place a ball of peanut butter filling inside. Close the ball to cover the filling. Continue with the remaining cookies. Transfer the cookies to the refrigerator for at least 30 minutes. If you will leave them longer, cover with plastic wrap.
  • Preheat the oven to 175˚ C, fan oven. Transfer 4 cookies to an oven tray. Press each cookie a little bit into the center where the filling is located. Bake for 12-14 minutes. Let the cookies stand for 10 minutes. Sprinkle them with a few of the extra chocolate chips. Transfer to a wire rack to cool or eat them warm.
