They are delicious, filling and go perfectly with afternoon coffee too. Make them and store them in a tightly sealed container. Not that they will last long!
Choc-chip oat cookies
Back to school. The ultimate snack for kids. These fluffy cookies, with chocolate chips, will be a hit and your kids will ask you to make them every week. They are delicious, filling and go perfectly with afternoon coffee too. Make them and store them in a tightly sealed container. Not that they will last long!
Ingredients
- 350 grams flour all-purpose or plain
- 1 tsp baking powder
- 1 tsp baking soda
- 1½ tsp salt
- 200 grams oat flakes
- 250 grams unsalted butter
- 140 grams brown sugar
- 110 grams granulated sugar
- 50 grams 2 Tbsp honey
- 2 large eggs
- 2 tsp vanilla essence
- 200 grams chocolate chips + extra for sprinkling optional
Instructions
- Sift the flour, baking powder, baking soda and salt into a bowl. Add the oat flakes and mix with a spatula.
- In a mixer, beat the butter with the brown and granulated sugar until the mixture is “white” and fluffy. Add the eggs, honey and vanilla. Whisk to combine.
- Then add the flour/oat mixture. Beat on low speed until just combined. Add the chocolate chips and mix well.
- Make balls of the mixture the size of a ping pong ball. If the mixture is too sticky for your hands, transfer it to the refrigerator for 10-15 minutes. Place the balls on a tray lined with non-stick paper. Transfer to the refrigerator for 30 minutes.
- Preheat the oven to 175˚ C, fan. Place the balls far apart between each other on baking trays lined with non-stick paper. Bake for 10-12 minutes. The biscuits will be soft when you take them out of the oven. They will become crispier when they cool. If desired, while the cookies are very warm, sprinkle with additional chocolate chips. Cool them on a wire rack.
- Store them when they are completely cool in a storage container with a lid.
