Ingredients
  

  • 4 Tbsp olive oil
  • 1 onion, finely chopped
  • 1 carrot, diced small
  • 1 stick of celery, diced small
  • 1 tsp tomato paste,
  • 4 chicken thighs, bone-in and skin on
  • 1 cube of chicken stock dissolved in 1 litre of water
  • ¼ tsp chilli flakes, or chilli powder
  • ¾ cups of orzo
  • 2 Tbsp parsley
  • 100 grams feta cheese, plus extra for sprinkling
  • Salt and pepper

Instructions
 

  • In a large saucepan, sauté the onion, carrot, celery and garlic until golden. Add the tomato paste, the chicken and stock. Bring to a boil, season with salt and pepper and add the chilli flakes. Reduce the heat and simmer for about 1 hour until the chicken is fully cooked.
  • Remove the chicken from the pot and set aside. Add the orzo to the pot and simmer until it is cooked al dente. Cut the chicken into strips and add it to the pot (discard the skin and bones). Crumble in the feta cheese and bring to a boil.
  • Serve the soup hot with extra feta, parsley and chilli flakes.
