Raw Beet and Kale Salad

Slice them very thinly (that’s the key really) and the earthy flavor of this colourful root vegetable will shine through. A sharp knife will not help you slice them paper thin, you really need a mandolin for this. If you don’t have one, grate the beets on the large holes of the grater. Continue reading

Shaved Brussel Sprouts Salad with Tahini Dressing

brussel sprouts.jpgA colourful, crunchy, fresh, nutty, flavourful salad with a tahini dressing to die for! Brussel sprouts need to be sliced thinly, so it’s best to use a mandolin or a box grater, unless you have advanced knife skills. If fresh brussel sprouts are not in season, make this salad with cabbage. It’s just as delicious. Serve it as a side dish or a light lunch. It even tastes great the next day. Continue reading

Grilled Halloumi Salad with Caramelized Kumquats

IMG_3470.jpgThis salad pleases the eye as well as the taste buds. I had so many kumquats in the fridge these days; I really didn’t know what to cook. I posted a question on instagram and one lovely lady suggested making a jam and then serving it with halloumi to balance the sweetness. I found that inspiring so I decided to create lovely salad with these ingredients. I didn’t make a jam, as that requires a different, time-consuming process. Continue reading

Paprika Grilled Chicken with Avocado Dressing

Serve this for lunch and all your figure-conscious friends will appreciate and enjoy without guilt. Even my 8 year old had a huge serving of this satisfying salad right after school.
