Tahini walnut pies
If you love traditional flavours, these tahini pies are sure to win you over from the very first bite! The soft, fragrant dough, infused with orange, embraces a rich filling of tahini, cinnamon, brown sugar and crunchy walnuts.
Ingredients
For the dough
- 400 grams all-purpose flour
- 40 grams granulated sugar
- 7 grams dry yeast granules
- ¼ tsp 2 grams baking soda
- ¼ tsp 4 grams salt
- 70 grams olive oil
- 100 grams water
- 80 grams fresh orange juice
For the syrup
- 65 grams water
- 75 grams honey
- Peel from half an orange
For the filling
- 200 grams tahini
- 70 grams dark tahini
- 1 tsp 4 grams cinnamon
- 135 grams soft light brown sugar
- 100 grams walnuts
Instructions
- Put the flour, sugar, yeast, baking soda, and salt in the mixer bowl and mix. Add the water, juice, and olive oil. Knead in the mixer (or by hand) until a soft dough forms. Transfer the dough to an oiled bowl and let it rise for about 2 hours, until it doubles in volume.
- Add the syrup ingredients to a small saucepan. Once it comes to a boil, remove from the heat and let it cool.
- For the filling, mix all the ingredients except the walnuts in a bowl.
- When the dough has risen, assemble the tahini pies: On a lightly floured surface, roll out the dough into a rectangle measuring approximately 35 x 45 cm. Spread the filling over the entire surface. Sprinkle the walnuts over 2/3 of the surface. Fold the dough into thirds like a letter, starting from the side without walnuts. You will end up with a rectangle measuring 35 x 15 cm. Roll out the dough again with a rolling pin to make it flatter. Using a pizza cutter, cut the rectangle into strips approximately 2 cm thick.
- To shape them, pull each strip slightly to lengthen it a little, twist it and form a spiral or “S” shape.
- Place the pies on a baking tray lined with non-stick paper. Cover them with a clean towel and leave them to rise for 30 minutes. Preheat the oven to 180 °C. Bake the pies for 18-20 minutes. As soon as you take them out of the oven, brush them with the syrup. Enjoy them warm or at room temperature.
