I love bulgur, and combining it with these juicy, flavorful meatballs creates a wholesome and satisfying family meal. The sweet potato adds natural sweetness and a wonderful texture to the meatballs, while the smoked paprika, mint and cayenne pepper bring depth and warmth.

The bulgur is cooked with onion, tomato, white wine and chicken broth, allowing it to absorb all the delicious flavors of the dish. Served with cool, creamy yogurt, this is simple, comforting food at its very best.

Meatballs with Bulgur

Ingredients
For Meatballs
- 500 grams minced pork
- 1 large onion
- 1 cup finely chopped parsley
- 1 small sweet potato grated
- 1 egg
- 2 Tbsp oats
- 1 level teaspoon salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 1 pinch cayenne pepper
- 1 Tbsp dried mint
- 2 Tbsp olive oil
For the bulgur
- 1 onion finely chopped
- 1 ½ cups bulgur
- 125 ml white wine
- ½ cup strained tomato puree
- 2 ½ cups chicken broth
Instructions
- In a large bowl, combine all the ingredients for the meatballs except for the olive oil. Knead well with your hands. Form small meatballs (about 24).
- In a large skillet, sauté the meatballs in olive oil until they are browned on all sides. At this stage, they will not be fully cooked. Transfer them to a bowl.
- In the same skillet, sauté the onions until they start to brown slightly. Add the bulgur and stir until the bulgur is coated with oil. Pour in the wine and let it simmer until the alcohol evaporates. Add the strained tomatoes and the broth.
- Return the meatballs to the skillet. Cover the skillet and simmer for about 10–15 minutes, until the bulgur is cooked through. Sprinkle with parsley and serve with yogurt.
