Moules marinières (french-style mussels)
Some dishes transport us with the very first bite and make us feel as though we’re sitting in a little, charming bistro in France! Moules marinières are exactly that: a warm hug from the sea, infused with the aromas of white wine, butter and fresh parsley, all beautifully brought together with a silky touch of cream. And alongside them, golden, crispy little potatoes.
- 2 Tbsp organic olive oil
- 200 g shallots finely chopped
- 1 Tbsp garlic finely chopped
- 1 kg pre-cooked mussels
- 125 ml white wine
- 50 grams unsalted butter
- Sea salt
- Black pepper
- 60 ml double cream
- 2 Tbsp fresh parsley finely chopped
- 1 lemon for serving
- Heat the olive oil in a large saucepan over medium-high heat. Sauté the shallots and garlic until they begin to brown slightly.
- Add the mussels (there is no need to defrost them first), the white wine and the butter. Once the liquid comes to a boil, cover the saucepan and simmer for 5 minutes.
- Sprinkle with the chopped parsley and pour in the cream. Stir to combine, then remove from the heat.
- Serve immediately with the Parisian potatoes and fresh bread.
