Moules marinières (french-style mussels)
Galatia Pamboridis
Some dishes transport us with the very first bite and make us feel as though we’re sitting in a little, charming bistro in France! Moules marinières are exactly that: a warm hug from the sea, infused with the aromas of white wine, butter and fresh parsley, all beautifully brought together with a silky touch of cream. And alongside them, golden, crispy little potatoes.

Κουζίνες French
- 2 Tbsp organic olive oil
- 200 g shallots finely chopped
- 1 Tbsp garlic finely chopped
- 1 kg pre-cooked mussels
- 125 ml white wine
- 50 grams unsalted butter
- Sea salt
- Black pepper
- 60 ml double cream
- 2 Tbsp fresh parsley finely chopped
- 1 lemon for serving
Heat the olive oil in a large saucepan over medium-high heat. Sauté the shallots and garlic until they begin to brown slightly.
Add the mussels (there is no need to defrost them first), the white wine and the butter. Once the liquid comes to a boil, cover the saucepan and simmer for 5 minutes.
Sprinkle with the chopped parsley and pour in the cream. Stir to combine, then remove from the heat.
Serve immediately with the Parisian potatoes and fresh bread.
