Ingredients

  • 250 grams whole wheat flour
  • 250 grams all-purpose flour
  • 15 grams 2 level tsp baking soda
  • 1 tsp salt
  • 150 grams Oats plus extra for sprinkling
  • 250 ml almond milk
  • 1 Tbsp apple cider vinegar or lemon juice
  • 20 grams 1 Tbs honey or maple syrup
  • 1 Tbsp carob molasses
  • 250 ml dark beer such as Guinness

Instructions

  • Preheat oven to 200° C, fan. Line base and sides of a 12 x 22 cm loaf pan with greaseproof paper.
  • Mix almond milk and vinegar and set aside. Milk will separate and that’s ok.
  • In a large bowl, mix flours, soda, salt and oats.
  • Mix honey and carob molasses with the almond milk/vinegar mixture. Pour that into the bowl with the dry ingredients. Add beer and mix well until you have a very wet and shaggy dough. Transfer in prepared loaf pan. Level surface with a spoon and sprinkle generously with more oats.
  • Transfer pan in the oven. Bake for 15 minutes. Reduce temperature to 170° C and continue baking 35 minutes more.
  • Remove bread from pan, discard baking paper. Return in the oven without the pan, 10 more minutes.
  • Serve warm or at room temperature.
