Orange-nut bites

They are mini bites of deliciousness!Your best treat for friendly gatherings or for gifting. They look a little like a kourambie but I made them with bite-sized hazelnuts. Make a double (or even a triple) batch of these. They are amazing!

For 50-60 bites
- 130 grams hazelnuts or almonds, roasted
- 225 grams butter, unsalted
- 70 grams powdered sugar
- 1 sachet of vanilla sugar
- 1/4 tsp salt
- Zest from 1 small orange
- 1 egg yolk
- 2 Tbsp cognac
- 320 grams all-purpose flour
- Extra powdered sugar for sprinkling
Preheat oven to 175°C, fan. Coarsely chop the nuts and transfer to a bowl.
Put the butter in the mixer bowl. Beat for 2-3 minutes to soften.
Add powdered sugar, zest, salt and vanilla. Beat until mixture becomes very fluffy and pale. Add egg yolk and whip to combine. Pour in cognac and whisk again.
Add the flour and beat with the dough attachment until combined. Add nuts and beat until a soft dough is formed that you can shape easily into small balls.
Use a cookie scoop or a teaspoon to form bite size balls. Place balls on oven trays lined with greaseproof paper.
Bake for 16-18 minutes until the cookies are lightly golden.
Cool for 10 minutes. Sprinkle with powdered sugar and mix by lifting the corners of the greaseproof paper to coat balls with the sugar.
When the bites have cooled completely, place them on a serving platter and sprinkle
again with powdered sugar.
