If you love Italian flavours with a little… attitude, get ready for a dish that knows how to steal the show! These tortellini combine rich, savoury goodness with a spicy kick that wakes up your taste buds without setting the kitchen on fire. Easy to prepare, hearty and full of flavour, they’re perfect for a delicious meal that will leave you asking for more.
Heat the olive oil in a large frying pan over medium heat. Add the bacon and sauté, stirring frequently, until it starts to release its fat.
Add the garlic, hot red chilli pepper and sweet red pepper. Continue to sauté, stirring occasionally, until the peppers soften and are thoroughly cooked. Season with salt and pepper.
Pour in the wine and bring the mixture to a simmer, allowing the alcohol to evaporate. Add the passata and one tablespoon of the chopped parsley. Simmer until the sauce thickens slightly.
Cook the tortellini in plenty of boiling salted water for 3 minutes. Using a slotted spoon, transfer them to the frying pan and gently toss with the sauce until the flavours come together.
Serve immediately with grated Parmesan and a little extra chopped parsley.
Notes
We can replace the hot chilli pepper with ¼–½ teaspoon of chilli flakes.
