Fajitas

I have never met a child—or an adult—who doesn’t enjoy a DIY wrap homemade fajitas. Not only are they fun to assemble and wrap, but they are also absolutely delicious. We can make our own spice mix and forget about ready-made fajita mixes for good.

Ingredients
  

For the Chicken

  • 500 –600 grams boneless chicken breast or thighs, whichever we prefer, cut into thin strips
  • 2 Tbsp olive oil
  • 2 garlic cloves crushed
  • 2 red onions sliced
  • 1 red bell pepper cut into strips
  • 1 yellow bell pepper cut into strips
  • 1 green bell pepper cut into strips
  • 1 cup beer
  • Salt and pepper

For the Spice Mix

  • 1 Tbsp cornflour cornstarch
  • ½ tsp chilli powder
  • 1 tsp paprika
  • 1 tsp sugar
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp cumin

To Serve

  • 2 packs Mexican flour tortillas
  • Pico de gallo
  • Guacamole
  • Sour cream
  • Onion salad

Instructions
 

  • We mix all the spice-mix ingredients together in a small bowl. We take 3 tablespoons of the mixture and sprinkle it over the chicken strips. We mix well so that the seasoning coats the chicken evenly.
  • In a large frying pan over high heat, we add the olive oil and sauté the chicken strips, stirring frequently, for 1–2 minutes. We remove the chicken from the pan and add the garlic, onions and peppers. We stir-fry for another 1–2 minutes, until the vegetables soften slightly.
  • We season with salt and pepper, return the chicken to the pan, mix well and pour in the beer. We continue cooking for another 1–2 minutes, until the sauce has reduced and the flavours have come together. There should not be too much liquid left. We check that the chicken is fully cooked while making sure it remains juicy.
  • We serve the fajitas with our choice of accompaniments and let everyone assemble their own delicious wrap.
