It was one of those days, that chicken was on the menu. Roasted chicken with potatoes is a weekly staple in my house. Kids like it, grown ups like it, dog likes it. This time I had to try something new. My kids are my worst nightmare when it comes to food, so I had to make something not too strange or new to their taste buds. Kumquats are in season and that calls for a feast celebration. I just love these little fruit gems of intense citrus aroma and unbelievable taste. I love eating them whole and feel them burst in my mouth. I admit I must have eaten half while making this dish.
Last year I cooked them in a brandied syrup (candied kumquats) and piled them on top of a creamy-dreamy cheesecake. This year I took a more savory route and used them to braise a chicken. Continue reading
Roasted chicken must be one of the easiest family meals but, oh so ordinary. Some nice, fruity rosé wine, cherry tomatoes and fresh thyme, transform an ordinary dish into something extraordinary. Butterflying the chicken is really important as it absorbs the flavours better as it bakes and remains unbelievably juicy and crunchy and golden on the outside. But the real star here is the sauce. Whenever in doubt, add honey. I know it sounds like the easy way out, but it’s SO delicious. I must admit, I’m not a huge fan of sweet meals. This chicken however, won me over. The happy “marriage” of mustard and honey, combined here with the sourness of the lemon and the intense aroma of rosemary, elevate this humble roasted chicken to another level.
