Mix all the ingredients of a fresh Greek Salad with a bowl of cheese tortellini and you will have a fantastic, summery dish, suitable for a delicious vegetarian lunch or a crowd pleasing starter. It’s incredibly easy to make. You can prepare it in advance and chill it until serving time. In fact it will get better after an hour in the fridge. The pasta will have time to absorb all the great flavours of the dressing. It’s the perfect summer dish to satisfy any pasta cravings threatening to mess with the ever so stressful bikini season. Grilled Halloumi Salad with Caramelized Kumquats

IMG_3470.jpgThis salad pleases the eye as well as the taste buds. I had so many kumquats in the fridge these days; I really didn’t know what to cook. I posted a question on instagram and one lovely lady suggested making a jam and then serving it with halloumi to balance the sweetness. Chicken Loaf

I remember eating meat loaf once a week. My mother used to make it using a combination of beef and pork mince. Over the years our eating habits changed and we became more conscious of what kind of meat we eat. So beef and pork were replaced by chicken breast mince. Baking the mince in a loaf pan helps keep its shape, but I like to take it out of the pan half way through cooking time and pour over it some white wine for extra moisture. Thai grilled prawns

Tangy, spicy, thai marinated prawns with the intense flavour of lemongrass and ginger. I can’t stop eating these once I get them off the grill. They couldn’t be easier, once you find the ingredients you just blitz them all together in a blender and voila! You have your fragrant marinate which you will turn later into a tasty dipping sauce. Thread the prawns on two skewers, one on top of the other. It helps keep their moisture and also, you can turn them easier. Enjoy with plain basmati rice. Continue reading
