One would think there isn’t such a thing as lighter Mac n Cheese. I mean it wouldn’t be proper Mac n Cheese therefore it should be called something else. However, taking away half the pasta from the traditional recipe and replacing it with cauliflower does qualify as a lighter version. Roasted Aubergines with Pomegranate

New way of roasting: Pomegranate juice. It gives such delicate sweetness, but it’s tangy at the same time. It turned my aubergines into something out of this world delicious. I meant to serve this dish as a salad but it’s a gorgeous, vegan, main course really, as the aubergines are so filling, meaty and rich. Pasta with Salmon and Lemony Yogurt Cream

Creamy pasta without cream? Yes please! This dish is so summery, vibrant, fresh; it’s hard to believe you can enjoy it guilt-free. It’s oh-so-low-fat, healthy and delicious! The yogurt adds so much creaminess without the extra fat of cream and also a very nice tang, which works so well with the salmon. The lemon adds freshness and just the right amount of acidity. You can prepare it in a snap and it’s one of the coolest ways to use up those forgotten salmon fillets in the freezer. Continue reading

Crispy, Baked Chicken Fingers with Panko-Halloumi Crust

chicken fingers2.jpgEasier, healthier, quicker, tastier chicken nuggets. Who wouldn’t want that? These are really easy, foolproof and delicious. For the coating I used panko breadcrumbs, as I like the crispier texture. Added grated halloumi to that and some Italian seasoning. Mixed with olive oil et voila! The perfect coating. Did I mention they are oven-baked? They come out crispy, golden, and gorgeous. Serve with a nice salad and lots of lemon wedges. Continue reading

Serve this for lunch and all your figure-conscious friends will appreciate and enjoy without guilt. Even my 8 year old had a huge serving of this satisfying salad right after school.
