I mean, it’s fun and challenging to make a tart base from scratch but when you don’t have the time, a biscuit crust will always make you look good. No kneading, no blind baking, just crush the biscuits and you are almost done. As simple as it may be, a cookie crust doesn’t have to be boring. Baked “Anari” Cheesecake with Pomegranate seeds

pomegranate cheesecake.jpgI saw quite a few posts on Instagram of people picking apples this time of year. Well, in Cyprus, Autumn is the season for the sweetest, reddest pomegranates. I love them everywhere. Sprinkled over Salads, over a luscious pannacota or, in this case, over a creamy cheesecake. I used a combination of Philadelphia and “Anari” cheese which is the Cyprus version of Ricotta cheese, only lighter. Surely, this is not a guilt free cheesecake but it’s considerably lighter than the all Philadelphia version. The creaminess of course, is all there. Continue reading

Chocolate Cheesecake with Hazelnut Crust and Frangelico

The only thing better than cheesecake, is chocolate cheesecake. Especially if the crust has chunky pieces of hazelnuts and the cheesecake is flavoured with “Frangelico” (Italian hazelnut liqueur). This is divine! Serve it with fresh strawberries, cover it with chocolate glaze and you have a dessert with a really WOW factor. It’s really easy to make and boy, it really has the looks! Mandarin Bavarois

 

mandarin bavaroisThis dessert is like a soft orange cloud of sweetness. The base is store-bought ladyfinger biscuits (savoiyardi) dipped in milk and then sprinkled with roughly chopped walnuts. The cream is a vanilla bavarois flavoured with the fragrance of mandarins and the topping is basically mandarin juice and sugar mixed with gelatin to create a thin topping of mandarin jelly. Apple upside-down Cake

applecake2This is a combination of my favourite vanilla, pound cake and the apple filling I use for apple pie. The result is an exceptional cake, moist and velvety. Garnish with some chopped walnuts or pecans for some crunch and extra flavor. I wouldn’t say no to a generous drizzle of double cream, but this cake is delicious served as it is. Still working on the presentation, but the taste is all there. Continue reading
