Chinese Pasta with Chicken and Veggies

This tasty pasta dish is my variation of Chinese noodles. In fact “Mitsides” spaghettini is ideal to cook with all the amazing Chinese flavours, like ginger, garlic, soy sauce etc. This terrific meal is a real crowd pleaser. You can improvise by adding prawns, beef or your favourite veggies. It’s a very easy dish, but remember that the number one rule in stir-frying is advance preparation and having all your ingredients near the stove. Chicken Chow Mein (Rosie’s noodles)

Everybody loves noodles. Especially home-cooked noodles. Rosie -a precious lady, whose every day help makes my life so much easier and keeps my sanity at (barely) acceptable levels- makes the most fantastic noodles. She uses rice noodles, chicken and whatever veggies she finds in the fridge. With the right amount of chilli and sauces, she always manages to present a great meal. Spiced Lentil Soup with Coriander and Coconut Milk

 

lentil soup.jpgSince I found my favourite recipe for lentil curry, I have been eager to turn it into a soup. All those spices and aromas pureed and served into a bowl with some crusty bread and a generous squeeze of lemon, it’s just perfect on a winter’s day. This soup is great. It’s very easy to prepare and incredibly hearty and filling. Red lentils, cooked with spices like cumin and mustard seeds then finished off with creamy coconut milk, fresh coriander leaves and lemon juice. Continue reading

A Colourful Chicken Biryani

biryiani2This is it. The aromatic, flavorful, spicy, delicious chicken biryani. If you don’t like spending time in the kitchen, this dish is not for you. But if you really enjoy cooking (and eating) then all the time you spend will be justified when you eat the first bite of this fantastic dish. In India, this is a celebration dish, usually cooked with goat. It consists of aromatic, saffron infused basmati rice, layered with fragrant meat curry and sweet onions. Spicy Oyster Mushrooms with Lemon and Garlic

 

oyster1I bought all these mushrooms once to make a pasta sauce but never got round to it, as –and this is typical- I already cooked far more food than my guests could consume. So I got stuck with portobellos, cap and 500 grams of oyster mushrooms. The portobellos turned into a tasty mushroom stroganoff and the caps into a creamy mushroom soup. And that left the oysters. So I decided on something really quick, flavourful and spicy. I cooked them in my griddle pan with a little bit of oil then added tons of flavor with garlic, lemon and soy sauce. I finished them with a generous sprinkling of chili flakes (don’t even think of leaving them out) and yum! Seriously good eats! Continue reading
